Christmas Loaves for Ginger Lovers

My Aunt Jude makes a spectacular Christmas cake with all of those things and I adore it and I could never improve on it.

But I know there are many of you who find glace cherries gross, raisins revolting, and who just don’t get the whole fruit cake thing. This cake is for you. Dates are simmered with grated pears, glace ginger & walnuts, and scented with Hakanoa Spicy Chai, then laced with whiskey, before being transformed into a rich loaf that gets better with age.

Imagine the finest Sticky Date Pudding with more fragrance & grunt and you’ll be in the right ballpark.

Serving suggestions;

A slice just as is, with a nice cup of tea.

A slice lightly warmed with icecream on the side trickled with a little Hakanoa Ginger Syrup, perhaps some slices of fresh fruit if you have any.

Thin slices served with a fine cheese, slices of fresh pear, fresh walnuts and a small glass of dry sherry – pure heaven.

or, for the very indulgent, butter a slice sparingly on both sides, then fry until warmed through and starting to crisp. Add a couple of fat slices of banana to brown in the pan if you have some. Serve with a dollop of chilled Marscapone or Stracchino cheese, and a trickle of Hakanoa Ginger Syrup.
